If you love sushi and are wondering how to use your bamboo mat in your cupboard at ease, this class is for you.


The experienced instructor will share the skills and knowledge with you, going through the art of sushi making, helping you every step of the way from the beginning to the end during the fun and informal class. 'Hands-on' experience will give you the confidence to make your own sushi at home.

The secret of successful sushi making to make the perfect sushi rice. You will learn how to cook and season sushi rice comfortably at home.

You will then move onto making 4 kinds of popular sushi rolls starting with Ura-maki (inside-out rolls) followed by Hoso-maki ( small rolls) and Futo-maki (big rolls). After that, you will utilise the newly acquired Uma-Maki making techniques, and make the famous Rainbow rolls.

Each sushi roll is cut into bite-size, so you will create a plate of 22 sushi pieces in total.

At the end of the class, you will enjoy the freshly made sushi with a glass of refreshment. Alternatively, sushi can be packed away in the box provided to enjoy for dinner at home.*

This class is a perfect experience gift for a birthday or anniversary.

*Raw ingredients such as salmon may not be suitable for take away depending on the weather and distance you travel.

Akemi Yokoyama has a background in Japanese food provenance, nurtured from her Father, who along with his family foraged and fished throughout the Island of Hokkaido. She is now a Japanese food specialist, chef, presenter and writer based in London. Her regular Japanese cookery classes at Sozai have received very favourable reviews in the UK’s national media, including Time Out and The Telegraph. She has also appeared on the popular TV programmes, C4’s Sunday Brunch and CBBC's Saturday Mash-Up, teaching the presenters how to make sushi. She is also an in demand private chef. She has cooked for celebrities including Tina Turner and Rina Sawayama.

She demonstrates authentic Japanese cooking in the UK and Europe at many diverse events, and she regularly works with the Japanese government’s related organizations promoting Japanese cuisine and sake to the media and public. Her latest culinary interests include all aspects of fermentation and flavour experimentation across multiple food cultures. .

Akemi is a member of the Japanese Culinary Academy UK, is a certified miso sommelier. She has judged Sake category at International Wine Challenge in 2020/2021/2022.

Great way to learn the fine art of sushi making.

Our daughters gave us a Sozai gift voucher as a Christmas present. We both love Japanese cuisine but were apprehensive about our culinary abilities. We need not have worried as Akemi and her assistant Angela were so hospitable and skilled in the art of teaching. The day flew by as we were taught the fine details of sushi making. We enjoyed eating our creations as we prepared them and also the next day. Thank you very much for a wonderful experience. We highly recommend Sozai Cooking School classes to anyone wanting to learn sushi skills.
