There're so many things that I've never seen or heard before like unbelievable presentation of sashimi, how important knives are, they delicately infuluence to raw fish or there're so many nice Sake producers in Yamagata prefecture and so on. Also, I realised my way of making Dashi was completely wrong!
As an attendance, it's very good to have small numbers of people like yesterday.
One thing is that it would be better for us if we could bring back written memo - how to make dashi etc - with us. I tried to type in what the head sheff were saying then but it was difficult...
Anyway, thank you again for the valuable time yesterday!
