Tan Tan Men is a Japanese take on Sichuan Dan Dan noodles.

The Vegan Tan Tan Men is deliciously rich and nutty soy milk and sesame seeds based ramen enriched with the umami extracted from kombu and shiitake mushrooms.

Our ramen specialist, Akemi Yokoyama takes you through the art of ramen making from the beginning to the end, ensuring that you will get a delicious bowl of ramen at the end of the class.

You will learn:

*How to make fresh ramen noodle from scratch
*How to extract umami from kombu and shiitake mushrooms
*How to make tan tan men soup
*How to make shiitake mushroom ragu
*How to make spring onion and garlic aroma oil
*How to cook and assemble a bowl of ramen

You will eat a delicious Tan Tan Men for lunch and take home a portion of freshly made ramen noodle for you to try at home.

Akemi Yokoyama has a background in Japanese food provenance, nurtured from her Father, who along with his family foraged and fished throughout the Island of Hokkaido. She is now a Japanese food specialist, chef, presenter and writer based in London. Her regular Japanese cookery classes at Sozai have received very favourable reviews in the UK’s national media, including Time Out and The Telegraph. She has also appeared on the popular TV programmes, C4’s Sunday Brunch and CBBC's Saturday Mash-Up, teaching the presenters how to make sushi. She is also an in demand private chef. She has cooked for celebrities including Tina Turner and Rina Sawayama.

She demonstrates authentic Japanese cooking in the UK and Europe at many diverse events, and she regularly works with the Japanese government’s related organizations promoting Japanese cuisine and sake to the media and public. Her latest culinary interests include all aspects of fermentation and flavour experimentation across multiple food cultures. .

Akemi is a member of the Japanese Culinary Academy UK, is a certified miso sommelier. She has judged Sake category at International Wine Challenge in 2020/2021/2022.

Our group loved the lesson from beginning to end. Our teacher made sure everyone, both adults and children, were involved. The afternoon was informative and enjoyable, and the ramen we made and ate at the end was absolutely delicious!

Getting to sushi master level!

This was a great session in a small format to learn more about the few things I didn't know about making sushi rolls and discovering new recipe. It was a very pleasant afternoon and I recommend it!

Great session

We loved this session! A great host and we learned a lot about Japanese culture as well as sushi itself.

We made a lot of sushi and got a really good goody bag.

Only thing that would make it 5 star would be to have more fish in the sushi we made, as it was mainly veg based.
