Knife Skills: Fish to Sushi

If you have been dreaming about filleting the fish by yourself, then make sushi and sashimi out of it, this class is your 'dream-come-true'. During the class, you will go through the entire process of how a fish turns into sushi and sashimi.

You will fillet a whole sea bream by yourself under the careful, step-by-step instruction of the experienced instructor. The class is restricted to a very small group to ensure that each student gets plenty of attention.

During the class you will:
*Fillet a whole sea bream, make one fillet into nigiri sushi and another into sashimi
*Slice a small block of salmon, make them into nigiri sushi
*Slice a scallop, make them into nigiri sushi

You will learn:
*How to wash, cook and season sushi rice
*How to fillet sea bream how to store them
*How to make nigiri sushi with sea bream, salmon and scallop
*How to make sashimi with sea bream and salmon
*How to present them on a plate
*How to choose a fresh fish suitable for sushi and sashimi
*Where to buy the fresh fish for sushi and sashimi

You will enjoy a drink of your choice from the bar at the end of the class to go with your sushi and sashimi. You may take home the rest in a box provided, but you must consume them within the day.

Suitable for:
*Anyone who has a basic knife skills, who is comfortable in handling a sharp knife.

Akemi Yokoyama

Akemi Yokoyama is a Japanese chef, presenter and culinary instructor based in London. Her regular classes at Sozai Cooking School have received very favourable reviews in national media, including Time Out and The Telegraph. She has also appeared on the popular TV programme, C4’s Sunday Brunch, teaching the presenters how to make sushi. Her friendly teaching style is easy to follow and informative, she will teach the art of healthy Japanese home cooking to students at all levels.

Akemi’s enthusiasm for gastronomy originated early in her childhood in Sapporo, where enjoying the spoils of wild vegetable foraging and sea fishing were regular family activities. This drove her understanding regarding the importance of the freshest, highest quality ingredients together with exquisite taste pairings in Japanese food.

She demonstrates Japanese cooking at various diverse events and she regularly works with the Japanese government’s related organizations promoting Japanese cuisine to the media and public. Akemi was recently invited to the prestigious cruise ship MS Queen Elizabeth as the guest chef to entertain guests with the authentic Japanese cuisines and to train their chefs.

Akemi is a member of the Japanese Culinary Academy UK, is a certified miso sommelier, and has the professional sake qualification WSET Sake Level 3.

1/2 Day Essential Ramen Class (Online)
It was fantastic!

I attended a 1/2 day Ramen class with Akemi. I was slightly worried whether my concentration would last that long but it was so engaging and filled with information that I could not believe how quickly the time went.

Akemi was well organised, giving us the recipe before hand, starting by setting out the plan for the class, and then teaching us in such a simple step by step route, I could follow her without any problem.

It was fascinating to learn how to make fresh ramen noodles. It was not difficult at all and the taste was heavenly. My whole family enjoyed the freshly made ramen afterwards.

I truly recommend this class if you are a ramen lover.

Nothing but fantastic!

I had a fantastic afternoon learning about ramen, and mastering how to make every element of ramen from stock to noodle to even Char Siu pork from scratch which I never thought I could do by myself at home.

Our instructor Akemi made sure everyone was on the track at every stage so no one was left behind at any point. Her instruction was very clear and precise, it was easy to follow her.

Akemi was so friendly and accommodating. She instructed us a few alternative recipes for a certain topping/sauce that fit everyone's dietary restrictions.

The result of the ramen making was a big success. It made me feel so proud that I was able to make it. The Char Siu was definitely one of the best ones I have ever tasted in my life.

I cannot recommend this class enough!

Fantastic Ramen world!

I attended Akemi-san’s half day Ramen Cooking class. It was an amazing experience.
Even though I am Japanese and I still learned a lot about ramen and even different eating cultures between the UK and Japan. Akemi-san is a very experienced and energetic instructor. She kept an eye on each of us very well. It is quite a task to make good ramen, and it turned out to be a delicious success! The chicken and kombu broth and Chashu pork was amazing. Although I can not eat gluten, she gave me very practical advice. We ate shoyu ramen on the day and will have miso ramen the next day. Thank you very much, Akemi-san.
I definitely learned a lot from this class and would recommend it to others.

Professional Ramen Class!

It was a great pleasure to attend Akemi’s online half day Essential Ramen class on Sunday afternoon.
Easy, Fun, Tasty… I’ve learned so many thing about Ramen deeply.
I’ve actually made various Ramen since then. So delicious!

It is a good idea to have a few breaks during the class, with no stress!
As Akemi stays online during the breaks, so we could ask her some questions as well.

I will definitely take another online class of Akemi in the near future.
Highly recommend. Arigato Akemi Sensei!
