Sozai is delighted to present two special guest chefs from Tsuruoka, Japan, a city in Yamagata prefecture recognized by UNESCO as a Creative City of Gastronomy.

This exclusive one-day-only event, held in collaboration with GEN education* of Italy, will introduce some very special wonders like the below.

- Exclusive knife skill demonstration by Master chef Suda.
Be dazzled by his extraordinary technique, then feel and taste the difference of exquisitely sliced vegetables and Japanese Kamaboko (savoury fish-cake made with white fish and egg)

- “Dashi” (Japanese broth) demonstration by master chef Saito.
Experience the skill and art of traditional methods of extracting “Umami” to make the best Japanese soup stock – then indulge in a bowl of delicious Ramen for lunch!

- Sake tasting & Japanese summer tea experience.

斎藤 聴 Satoshi SAITO
Executive head chef of Tachibanaya ryokan (traditional Japanese inn) since 2002.
Master Saito is well known as its refined Kaiseki course preparation with full of local and seasonal ingredients. Certified chef by The out standing technic association of Japan

須田剛史 Takeshi Suda
Head chef in educational restaurant Okimizuki in Kamo Aquarium, where contributes as local fishery and cultural revival center. Young master Suda devotes to various educational program with passion from traditional tea ceremony to cutting Fugu fish technic.

Izumi Nakamura

Izumi grew up in Amakusa, a beautiful chain of five islands located in the south of Japan, blessed with delicious, natural, wholesome food -Izumi has never been far away from the joy that food can bring, honing her super-healthy recipes in surroundings with rich history.

Izi draws upon this upbringing in her work as an outstanding sushi chef, dietary consultant, and qualified sake sommelier. Her background as a trained and experienced pharmacist also enables her to create dishes and menus that are as nutritionally balanced as they are delicious.

Izi shares her passion for Japanese cooking and the health benefits to be had from it through her fun, informal, hands-on lessons. Her down to earth teaching and creative demonstrations at many companies and shows such as Your Sushi, Big Life Organics and Hyper Japan have already encapsulated and combining her talents. Her private lessons will show you how to create simple, delicious food. She is also the founder of 5 Incorporated Ltd, offering private chef/corporate event catering services.

Izi is a member of the Japanese Culinary Academy UK.

Vegan creative sushi class
Excellent birthday present

I attended the vegan sushi making class with my boyfriend for his birthday. We enjoyed how cosy and casual it was and learned a lot from Izzy and Misoko, who were very accommodating and friendly. We had a wonderful time together rolling our own sushi and sipping Japanese beer and sake :) I would recommend it to anyone who is after a fun time alone or with company and wants to learn new skills while having fun.

Quite excellent course, really enjoyed it. Very informative and instilled confidence in being able to create sushi. Would highly recommend it. All my friends and family were impressed with the sushi I made on the day.
