Sozai is delighted to present two special guest chefs from Tsuruoka, Japan, a city in Yamagata prefecture recognized by UNESCO as a Creative City of Gastronomy.

This exclusive one-day-only event, held in collaboration with GEN education* of Italy, will introduce some very special wonders like the below.

- Exclusive knife skill demonstration by Master chef Suda.
Be dazzled by his extraordinary technique, then feel and taste the difference of exquisitely sliced vegetables and Japanese Kamaboko (savoury fish-cake made with white fish and egg)

- “Dashi” (Japanese broth) demonstration by master chef Saito.
Experience the skill and art of traditional methods of extracting “Umami” to make the best Japanese soup stock – then indulge in a bowl of delicious Ramen for lunch!

Executive head chef of Tachibanaya ryokan (traditional Japanese inn) since 2002.
Master Saito is well known as its refined Kaiseki course preparation with full of local and seasonal ingredients. Certified chef by The out standing technic association of Japan

須田剛史 Takeshi Suda
Head chef in educational restaurant Okimizuki in Kamo Aquarium, where contributes as local fishery and cultural revival center. Young master Suda devotes to various educational program with passion from traditional tea ceremony to cutting Fugu fish technic.

Izumi Nakamura

Izumi grew up in Amakusa, a beautiful chain of five islands located in the south of Japan, blessed with delicious, natural, wholesome food -Izumi has never been far away from the joy that food can bring, honing her super-healthy recipes in surroundings with rich history.

She draws upon this upbringing in her work as an outstanding sushi chef, dietary consultant, and qualified sake sommelier. Her background as a trained and experienced pharmacist also enables her to create dishes and menus that are as nutritionally balanced as they are delicious.

She shares her passion for Japanese cooking and the health benefits to be had from it through her fun, informal, hands-on lessons. Her down to earth teaching and creative demonstrations at many companies and shows such as Your Sushi, Big Life Organics and Hyper Japan have already encapsulated and combining her talents. Her private lessons will show you how to create simple, delicious food. She is also the founder of 5 Incorporated Ltd, offering private chef/corporate event catering services.

Izumi is a member of the Japanese Culinary Academy UK.

1/2 Day Online Ramen Class

I participated in Akemi's Online Essential Ramen class on Sunday afternoon; it was an excellent experience and I am amazed by the results obtained: ½ day and there I know how to
make fantastic ramen ☺ and we really enjoyed ourselves.
Akémi is charming and her teaching is very pleasant, natural and intuitive.
Chicken broth, Chashu pork, Ramens noodles, garnishes and finally different sauces, Salted, Soy or Miso, a complete and fun learning experience in a good atmosphere full of exchanges.
I highly recommend this class.

J’ai participé à la classe Essential Ramen en ligne d'Akemi le dimanche après-midi ; cela a été une excellente expérience et je suis bluffé par le résultat obtenu : ½ journée et voilà je sais faire des fantastiques ramens ☺ et nous nous sommes régalés.
Akémi est charmante et son enseignement très agréable, naturel et intuitif.
Bouillon de poulet, porc Chashu, nouilles Ramens, garnitures et finalement différentes sauces, Salé, Soja ou Miso , un apprentissage complet et ludique dans une bonne ambiance pleine d’échanges.
Je recommande vivement cette classe.

Highly recommended

My partner and myself had great time. Izumi was nice and friendly and really patient. We learnt many tips and interesting Japanese culture from her in the class. We will definately book another class :)

Fun and informative

Izumi was great. The session was fun and informative. I would have liked a slightly longer class, but it worked well as it meant you could practice on your own at the end of the Zoom session. Would definitely recommend.

Great family event!

I loved the idea of kiddies joining us too. it was lovely to see girls/boys helping and enjoyingthemselves.Thank you sooo much Izzie, it was fantastic evening and great experience. I just managed to make few more for tomorrow. The previous batch disappeared before I had a chance to take a photo. Sushi were absolutely delicious ?, you are amazing chef/presenter ?
