Online Ichigo Daifuku Class

Experience this amazing fusion of Japanese sweet mochi and fresh fruit in this Strawberry Daifuku class. First created in the 1980’s, Ichigo Daifuku, is truly a Japanese delicacy consisting of a juicy strawberry coated with sweet anko bean paste and an outer layer of soft pillowy mochi. Learn how to make this special Japanese signature sweet and indulge your afternoon tea with a Japanese twist!

In this class, you will learn:
- Making soft and pillowy mochi
- Making sweet bean paste: red or white anko
- Creating 3 different types of Strawberry Daifuku
- Creating Mochi Ice Cream

Glutinous Rice Flour
White Sugar (granulated or caster)
Cornstarch or Potato Starch (for dusting)
Canned Adzuki Beans 400g or Canned Cannellini Beans 400g
Small Strawberries or Raspberries

Equipment you will need -
Mixing Bowls & Measuring Spoons
Silicone or Wooden Spatula for mixing
Steamer (or a Pot w/ Lid to steam the mochi)
A bowl that will go into your steamer or pot
Electric Hand Blender or Potato Masher

The instructor will lead you through the process of Strawberry Daifuku making step-by-step. Experience creating this delicious Japanese dessert with this fun and interactive cookalong.

Kinu Yukawa

Kinu Yukawa is a Japanese chef and cookery teacher from Kobe, Japan. She ventured into the world of food early in life and fostered the basics of cooking from her grandmother. Later she trained French cuisine at Ecole Ritz Escoffier Paris and traditional Japanese cuisine in Kyoto.

Kinu believes in the simplicity of the Japanese philosophy of enjoying food with all the body's five senses <五感楽しむ和食>. She appreciates the importance of cooking with vegetables that are in season and at the height of their flavour. By respecting the seasons and their offerings, food nourishes and brings harmony to the body, which is the principle of "和食 Washoku" <the harmony of food> .

Kinu's teaching style focuses on cooking techniques and skills, ensuring students learn the cooking skills to be their own. She was teaching cooking in Hong Kong for 7 years, and now in London for 10 years. She is fascinated by sharing her expertise and knowledge of Japanese cooking with students of all walks of life and culinary levels.

Homemade gyoza

This was a really enjoyable class, gyoza had seemed very tricky and fiddly, and as this was my first attempt I didn't think I'd get such good results, but Kinu's instructions and advice as always made it a very easy process. Would definitely recommend the online classes, have been able to try a lot and learn so much with them.

Great gyoza class

A fantastic class learning to make gyoza where I learned a lot of new techniques. I was really impressed how my first ever gyoza turned out and will definitely make them again, so yummy! I'd highly recommend these online classes and look forward to booking another class in future. Thanks Kinu!

Udon & Kakiage Cooking

I've never made Udon from scratch and Kakiage Tempura. Kinu taught us from the basic and kindly offered 2 different kind of soup/sauce for Udon which was really great and enjoyed both hot and cold Udon for dinner with delicious Tempura. Kinu was very skilful and kind to us to share her great depth of knowledge. I highly recommend Sozai cooking courses! Thank you so much!
