ONLINE Tofu and Soy Milk Making Master Class

*The class is conducted on Zoom

In this class you will make fresh soy milk and tofu from dry soybeans in the most authentic Japanese method. An amenable and versatile, light enough to be paired with a variety of ingredients and seasoning. Homemade tofu is the most elegant and delicate of flavours, yet it can go happily with much bolder characters like ginger, garlic, and chilli.

During the class you will learn the following:

*How to make fresh soy milk from scratch
*How to make Japanese style fresh tofu
*How to make soybean pulp mochi

Your shopping list - Please make sure you have the following prior to the lesson. The full shopping list, recipes, and pre class instruction will be sent to you prior to the class. You will need to wash and soak the soybeans in water in the morning of the lesson.

200g dried soy beans
8g food grade epsom salt
100g potato starch (or katakuriko)
60ml soy sauce
60ml mirin
1 tablespoon sugar
2 sheets of nori seaweed


• Large pot 5L+
• Large bowl + medium bowl
• Wooden spatula + Silicon spatula
• Food processor or blender
• Large sieve + Small to medium sieve
• Small glass + teaspoon
• White tea towel
• Ladle

Useful but not essential
• Waterproof/heat resistant kitchen/oven glove

Akemi Yokoyama

Akemi Yokoyama is a Japanese chef, presenter and culinary instructor based in London. Her regular classes at Sozai Cooking School have received very favourable reviews in national media, including Time Out and The Telegraph. She has also appeared on the popular TV programme, C4’s Sunday Brunch, teaching the presenters how to make sushi. Her friendly teaching style is easy to follow and informative, she will teach the art of healthy Japanese home cooking to students at all levels.

Akemi’s enthusiasm for gastronomy originated early in her childhood in Sapporo, where enjoying the spoils of wild vegetable foraging and sea fishing were regular family activities. This drove her understanding regarding the importance of the freshest, highest quality ingredients together with exquisite taste pairings in Japanese food.

She demonstrates Japanese cooking at various diverse events and she regularly works with the Japanese government’s related organizations promoting Japanese cuisine to the media and public. Akemi was recently invited to the prestigious cruise ship MS Queen Elizabeth as the guest chef to entertain guests with the authentic Japanese cuisines and to train their chefs.

Akemi is a member of the Japanese Culinary Academy UK, is a certified miso sommelier, and has the professional sake qualification WSET Sake Level 3.

Vegan tan tan men

This was a great class, Akemi is very passionate about Japanese food and shared the background of the ingredients and the dish. It was a very relaxed class and went along at a nice pace. The end result was delicious, even though its common in Japan to eat the noodles and leave the soup, this recipe is too good not to finish it all!

Really enjoyable

Such a wonderful class! Went at an excellent pace so I didn't feel overwhelmed but also didn't feel too easy. Really interesting information about the history of ramen and kombu too. Thank you so much for a really great two hours (also the food tasted incredible!!)
