Sashimi and Nigiri for the professionals.

This is a special opportunity to learn how to prepare and making sushi by exclusive sushi chef. The participant will learn,

-How to cut popular fish from the whole / block for sushi and sashimi.
-How to prepaer traditional / restaurant sushi rice.
-How to make Sashimi Mori ( raw fish platter ).
-Popular sushi rolls to practice at own work spaces. Such as,
Nigiri
Slim roll
California roll
Rainbow roll
Dragon roll

This is an intensive and advance class where the participants will enjoy Q&A time and close the class enjoying a drink and their own freshly made Nigiri, Sushi rolls, and Sashimi with real wasabi.

Please bring your own knife and apron / chef jacket.

Instructor's profile

Tomokazu Matsuya
Born in Hokkaido, Japan. Matsuya is one of London's top Japanese sushi chefs, he has been in UK over 15 years. He completed his culinary education at 17 years old.

After obtaining his international cook's license he joined the self-defense forces of Japan and for 15 years cooked for many VIPs from all over the world as the forces' chef. After starting his own venture, he took a position at SO Restaurant in Soho and also at Miyama Mayfair London as Head Sushi Chef. Now he is starting his own Japanese restaurant in central Acton London.

北海道⽣まれ。17歳にして⾷の道を志してから、国際船舶料理⼠の免許を習得し⾃衛隊に所属。その後15年に渡り、世界各国の著名⼈らへも料理を提供してきた。渡英してからは、⾷の中⼼地とも呼ばれるソーホーのSo Restaurant, またロンドンでも⼀等地のメイフェアのMiyamaにて、いずれも料理⻑を務める。ラグジュアリーロンドンでも掲載されたIkisho ブランドを通じ、プライベートシェフをしての腕もふるっている。新しくセントラルアクトンにて、カジュアルな⽇本⾷を提供するEzo Japanをオープンし、起業家としても才能を発揮している。

Cancelling Your Class.
If you need to cancel a booked class for any reason, please get in touch as soon as possible. We will be able to refund payment, either partially or fully, provided sufficient notice is given.

1) If your booked class is more than 7 days away, you can contact us to change your booking to another day or receive a full refund.

2) If your booked class is between 3 and 7 days away, 50% of the total cost will be credited to your Sozai account to be used on another date.

3) If your booked class is less than 3 working days away, the full fee is payable whether or not you attend. No transfer, no refund

Shojin meal

Mr Tanahashi created the most amazing meal over six courses, which was satisfying, delicious and utterly splendid. He told us that no machines are used in the food creation which is just astonishing, especially when the dishes were complicated and intricate.

An excellent meal and great service, too!

Shojin

Lovely presentation of cooking with meditation. A printed sheet with the ingredients for the sesame dressing and a list of stockists of the tools required to make it would have been useful.

The dressing made the vegetables taste really delicious and I will try it once I have the appropriate kitchen tools.
