Black Cod and Japanese Home Cooking

Black Cod was made famous by the restaurant NOBU for it's exotic aroma and intensive taste that melts in the mouth. It's buttery, mild and rich flavor enhanced by the sweet miso marinade has captured the heart of so many food-lovers all over the globe. It is typically served in the high-end restaurants at a price of £20 to £45, but in reality, the black cod is very easy to prepare and cook, you just need to know how!

In this class, you will learn to cook the following delicious dishes, our favourite home cooking dishes. You will also get 2 black cods, 1 to cook during the class, and another to take home to cook at home. It really cannot get better than this!

You will learn to make the following:

*Black Cod
*Ginger rice with sake and miso
*Spinach with roasted sesame seeds
*Japanese omelette
*Salad dressing with miso
*The most authentic miso soup with seasonal vegetables

Please note that the Black Cod need to be marinated and rest in the fridge for 48-72 hours. Pre-marinated fish is cooked during the class.

Including a glass of drink of your choice with the dinner.
We stock authentic Japanese sake, Japanese beer, white and red wine and various soft drinks to offer.

Akemi Yokoyama

Akemi Yokoyama is a Japanese chef, presenter and culinary instructor based in London. Her regular classes at Sozai Cooking School have received very favourable reviews in national media, including Time Out and The Telegraph. She has also appeared on the popular TV programme, C4’s Sunday Breakfast, teaching the presenters how to make sushi. Her friendly teaching style is easy to follow and informative, she will teach the art of healthy Japanese home cooking to students at all levels.

Akemi’s enthusiasm for gastronomy originated early in her childhood in Sapporo, where enjoying the spoils of wild vegetable foraging and sea fishing were regular family activities. This drove her understanding regarding the importance of the freshest, highest quality ingredients together with exquisite taste pairings in Japanese food.

She demonstrates Japanese cooking in the UK and Europe at various diverse events and she regularly works with the Japanese government’s related organizations promoting Japanese cuisine to the media and public. Akemi was recently invited to the prestigious cruise ship MS Queen Elizabeth as the guest chef to entertain guests with the authentic Japanese cuisines and to train their chefs.

Akemi is a member of the Japanese Culinary Academy UK, is a certified miso sommelier and has the professional qualification WSET Sake Level 3.

I learnt so much at the ramen noodle class last night. From the subtleties of the different noodles bars in London, origins of the dish and the science behind why it tastes so good! We made everything from scratch including the noodles - the smell and taste were divine! Off to reproduce this for my friends this weekend! Thanks Sozai UK

We had a great time at this class. Akemi was a gracious host and so knowledgeable on all things Miso. We learned so much and are looking forward to trying the batches we made when they are ready. Akemi’s knowledge extends beyond miso of course and she happily shared her wider experience. Learning about sake was especially interesting. Thank you for a great time.
