Born and brought up in Osaka, Japan, her family runs a traditional udon noodle restaurant where they also sell wagashi. Suzue was brought up surrounded by many food inspirations. While Suzue helped wagashi making at home, she used to wonder how the patisseries were made next door which led her to discover the world of patisserie.
Suzue studied at the Le Cordon Bleu in London and Paris and obtained both Patisserie and Culinary diplomas. During her training days, she gained various experiences from the world's leading hotels. Eventually, Suzue was promoted to be in charge of the renowned afternoon tea pastries at The Savoy London. She also achieved several awards including the Gold award for Tea Pastries and the Gold medal at the Culinary Olympics.
Suzue co-founded and built the premium brand 'William Curley' which won several chocolate awards and joined the world's leading association, Relais Desserts. During this time she also mentored young pastry chefs who now work successfully as pastry chefs around the world.
Suzue's philosophy is to 'Spread the Joy of Patisseries' and she would love to teach and share her skills with you.
It was easy to follow and the teacher responds to our questions spontaneously. Fun to watch other students working in the kitchen as well.
The topic was also fun with a bit of Japanese taste to it!
I totally enjoyed this Dorayaki class with Suzue. Firstly, Suzue taught us how to make Anko sweet red bean paste from scratch which was very useful as now I can make Anko easily at home. We also made Custard, Mizuyokan, and last but not the least, the Dorayaki pancakes. My family loved the homemade Dorayakis. Thank you so much!
I really enjoyed Suzue's Online Mille Crepe class. She has so much experience and makes it look so easy. I'm a bit slow at learning and get a bit overwhelmed with the ingredients and steps, however she was very helpful and patient. She also shared many useful tips that I will use for now on. Everyone finished with beautiful cakes at the end and ours was super yummy! Can't wait to do another class with Suzue and would definitely recommend to anyone willing to try something new.
I've heard of this cake before and want to learn how to make it so badly. Suzue gave very clear explanation and instruction-turned out it's easier than I thought! She also showed some useful technique in assembling and decorating the cake. I enjoyed this class very much and was very satisfied with the strawberry cake. Even though you need to pick the strawberry/fruit or match version to make during the class, you get the recipes for both. Very amazed how good/less heavy it tastes with just the whipped creme as oppose to using icing normally with other cakes. Will definitely try to make the matcha version next time. More mille crepe cake to come for friends and family.
